Organically grown.

A Chilean heirloom rumored to be descended from the likes of Rose de Lautrec and Valencian Red. Flat, Cinderella pumpkin-like bulbs peel back to reveal the most beautiful, dusty pink clove wrappers - a must-see.

When planted “on time” in October here in Cottage Grove, it matured early in mid-May; when planted in late December/early January, it matured “on time” in late June. Does not consistently produce stems/scapes, and scapes that do appear dry down hollow resulting in a softneck-like stem. May behave differently in other climates - let us know your results!

Taste is fresh, intense, spicy, fading down to a classic garlic bite. Stores up to 7 months after harvest; use by the end of January.

Ajo is Spanish for ‘garlic,’ rosado/rosa is ‘pink,’ and Chileno is ‘from Chile.’

*Due to rarity, this variety is sold by the bulb.
